We talk some entertainment, and I had an idea for when I finally get my ass down to Southern Italy, which is where I want to be. We also talk potatoes and \u00a0ketchup. Recipes to follow. Also, who out there knew I could juggle? So check it out!<br \/>\n<iframe allow=\"autoplay\" class=\"youtube_embed_iframe\"    allowFullScreen=\"true\" style=\"width:640px; height:385px\" src=\"https:\/\/www.youtube.com\/embed\/0r2On19ywx8?autoplay=0&theme=dark&loop=0&fs=1&showinfo=1&modestbranding=0&iv_load_policy=1&color=red&autohide=1&disablekb=0&enablejsapi=1&version=3\"><\/iframe><br \/>\nHere&#8217;s the ketchup recipe, and you can do what you want to do to make it your own:<\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 tablespoons olive oil<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 medium onion, chopped medium<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 clove garlic, minced<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 28-oz can tomato pur\u00e9e<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\/4 cup packed dark brown sugar<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\/4 cup packed light\u00a0brown sugar<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\/4 cup cider vinegar<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 tablespoon tomato paste<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\/2 teaspoon kosher salt<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\/2 teaspoon ground mustard<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\/8 teaspoon ground cloves<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\/8 teaspoon allspice<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\/8 teaspoon cayenne pepper<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<ol>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Heat oil in a medium saucepan over medium heat until shimmering. Add in the onion and cook, stirring occasionally, until softened but not browned, 5 to 8 minutes. Add in the garlic and stir until fragrant, about 30 seconds. Add the tomato pur\u00e9e, brown sugar, vinegar, tomato paste, salt, mustard, cloves, allspice, and cayenne pepper and stir to combine. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, until thickened to the consistency of ketchup, 45 to 60 minutes.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Place ketchup in the jar of a blender and pur\u00e9e until completely smooth.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Wash and dry saucepan, then place a fine mesh strainer over top. Pour ketchup in the strainer and, using a spatula, force through all of the ketchup.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Taste ketchup and adjust seasonings if necessary. Pour ketchup into a jar, seal, and store in the refrigerator for 3 weeks up to a month.<br \/>\n<\/span><\/li>\n<\/ol>\n<p>The Potatoes are even easier!<\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 potatoes<\/span><\/li>\n<li style=\"font-weight: 400;\">salt<\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">\u00a0 \u00a0 \u00a01. Peel and julienne potatoes<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">\u00a0 \u00a0 \u00a02. Bring water to boil, add salt<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">\u00a0 \u00a0 \u00a03. Boil potatoes for 2-3 minutes<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">\u00a0 \u00a0 \u00a04. Drain potatoes and lay out on baking sheet, place in freezer until frozen<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">\u00a0 \u00a0 \u00a05. Bring your frying oil of choice to temperature, and deep or pan fry as you prefer until golden brown.<\/p>\n<p><\/span>Totally simple!
